Aubergine and Parmesan Pesto

Smokey Mediterranean aubergines with tomato, Parmigiano Reggiano (PDO) and basil.

A thick and creamy pesto with (PDO) Parmesan with a background of rich tomato, basil & garlic.

Usages:

• As a topping for a bruschetta 
• Stuff inside a chicken breast, coat with breadcrumbs and roast
• As a layer of a lasagne, or added to the minced beef for extra rich
• Stir 2 tablespoons through 100g of pasta
